Introduction of New Brand Amplifies Focus on Product Innovation


(Fairfield, New Jersey) Schuman Cheese, maker of the Cello and Yellow Door Creamery brands, has five new reasons to celebrate following the recent World Cheese Awards. Four Cello cheese products and one new-to- market Yellow Door Creamery cheese earned medals at the world’s largest “cheese-only” competition.

A testament to Schuman Cheese’s success in delivering smart and tasty Innovation products, Cello Parmesan Whisps earned a gold medal in a category for various cheeses that don’t fit other class categories. Cello Whisps are made from just one ingredient, Cello’s award-winning Parmesan Cheese, and baked into flavorful, airy, crispy bites ideal for a guilt-free snack.

In an open hard cows’ milk category, Cello Asiago earned silver honors. Made in small batches and aged 10 months using methods steeped in Italian heritage, this buttery cheese is mild yet assertive, boasting a robust, nutty depth. Another version of Cello Asiago, wheels aged for three years, earned a bronze medal in the same category.

A smoky blend of chili, cumin and caraway seed paired with the rich and nutty flavor of Fontina proved a winning combination in the category honoring hard pressed cows’ milk cheese with savory additives. Yellow Door Creamery’s smooth and creamy Fontina wheels are hand-rubbed with vibrant spice blends from around the globe and naturally aged for over 60 days. The winning variety – Harissa Hand Rubbed Fontina – earned a gold medal in the competition.

Aged more than 10 months and 100 percent natural with no preservatives or fillers, Cello Grated Parmesan is a basic ingredient of fine Italian cooking. This staple in the Cello product lineup earned bronze honors in the shredded or grated cheese category.

In 2016, the Guild of Fine Food took the World Cheese Awards to San Sebastián in the Basque region of Spain, where it was a key part of the International Cheese Festival. The competition drew entries from 31 countries, and the judging panel, made up of more than 250 renowned cheese makers, buyers, retailers and writers, analyzed more than 3,000 cheeses in a single day.
