Our domestic cheeses are handcrafted by our artisan cheesemakers at Lake Country Dairy in the heart of America’s dairy land, Wisconsin. We use fresh milk from local privately owned family farms to produce authentic cheeses following traditional Old World practices.
These long-standing relationships allow us to ensure quality from vat through delivery, all supported by a comprehensive quality assurance system that consistently earns top scores in audits performed by third-party experts, and our customers’ quality assurance departments.

Italian Style
Cello® Copper Kettle
This one-of-a-kind cheese uses an exclusive recipe that’s cooked in copper vats, and aged for 16 months. This artisanal method of cooking and aging imparts an award-winning combination of fruity, cooked caramel flavors that offer unique notes of crushed apple and pineapple.
Cello® Asiago
Rustic, and lightly sweet with a nutty finish. What’s unique is that we do not add lipase. By staying true to the original Italian recipe, it’s much better to eat by itself. Aged 10 months.
Cello® Artisan Parmesan
Designed for the unique conditions of the Lake Country Dairy region using select cultures. Ideal for culinary applications, yet distinctive enough to enjoy on a cheese board. Bold, nutty flavors with notes of crushed apple. Aged 12 months.
Cello® Traditional Romano
Sharper, more piquant, but with a cleaner finish than typical U.S. varieties. A truer cow’s milk version (of the famous sheep’s milk Pecorino Romano) that delivers a classic Italian taste. Aged 6 months.
Cello® Italian Style Fontal
Delicately handcrafted, and carefully cured. Smooth, creamy texture with a mild, slightly sweet flavor. It’s a wonderful table cheese, and melts perfectly. Aged 3 months.

Made from fresh milk, and sweet cream. Rich flavor, and smooth consistency. Ideal for filling cannolis, or using in a classic tiramisu recipe.
