One Pan Casserole with the Italian Pizza Blend!
This pasta bake of noodles, Three cheese blend, chicken, pesto and tomato is a one dish meal that is easy to prep (can be made in advance) and clean up and that your family will crave!
1 Tbsp Butter, unsalted
8 oz Pasta, raw, dried, small
1 Tbsp. Garlic, Minced
3 Cups Schuman Italian Pizza Shredded Cheese Blend
2 Cup Milk, whole (or if you like it richer mix with heavy cream)
1 tsp Salt
1 tsp Black Pepper, fresh grind
2 chicken breasts, boneless, skinless cut into 4 pieces (dark meat will also work)
4 tsp Pesto
12 ea grape tomatoes (cut in ½)
1/8 cup bread crumbs
Preheat oven to 360 degrees
In a casserole dish, coat with butter
Add raw pasta, 2 cups cheese, garlic, salt and pepper and milk. Mix well and make sure pasta is covered in liquid.
Top with chicken breasts and spread 1 tsp of pesto on each breast.
Top with remaining cheese and sprinkle bread crumbs last.
Cover with foil and bake at 360 for 30 minutes, remove foil and bake 15 minutes more until brown and crispy and pasta is cooked.
Cut with spatula and put on plate and serve. (Pour over any juices in the bottom of pan)
Juicy Burger Quesadilla with the Everyday Blend!
This recipe combines two classic comfort foods which are quick and satisfying for the whole family. In this recipe we use the simple quesadilla as a vehicle for holding the burger instead of a bun. It makes a fun and unique hand held sandwich that everyone will love. Serves 4.
4 10” flour tortilla
4 cups Schuman Everyday Shredded Cheese Blend
1 jalapeno, sliced into 20 thin slices (Optional)
1 ½ # Ground Beef, formed into 4 6oz. patties, Salt and pepper to taste
4 oz Guacamole (Store bought, homemade or just sliced fresh avocado)
2 oz Pickled red onion (or other kind of pickle)
4 leaves of lettuce (romaine)
2 oz Ketchup (or Chipotle Ketchup, made with equal parts ketchup and chipotle puree)
Divide one cup of cheese over ½ of the tortillas, top with five slices of slivered jalapenos (if using), and fold tortilla over to form half-moon with cheese in middle
Put a large pan over medium heat, cook quesadillas until brown on one side and flip until still pliable, but all the cheese is melted. About 1 minute per side. Remove to plates
Season burger with salt and pepper and cook to desired doneness.
On ¼ half of quesadilla, put ½ oz ketchup, top with burger.
Top burger with guacamole, lettuce and pickled onion. Fold other side over and serve.
To eat, pick up burger with corner facing down and dig in!
Grilled Cheese with the Mac & 3 Cheese Blend
Great melt and buttery notes from Fontina, nuttiness from the Swiss and sharp tang from Cheddar makes this blend much more versatile than just for mac and cheese! Use the grilled cheese as a base for an open face sandwich with whatever you have in the fridge.
8 slices Bread (I like Brioche, but any will do)
2 cups + 1 cup, Schuman Mac & 3 Cheese Blend
2 Tbsp Butter, unsalted
2 ea Avocado, ripe, medium size, cut into slices (pre-made guacamole also works)
1 Tomato, large, ripe cut into 8 thin slices
1 T Calabrian Chili peppers, chopped (optional)
Put, ½ cup of Mac & 3-Cheese shredded blend on top of 4 pieces of the bread, and top with other piece of bread so you have 4 sandwiches
Over medium heat in a cast iron or non-stick pan melt some of the butter.
Grill the cheese on the first side until brown and toasted, about 2 minutes.
Remove sandwiches from pan, and put a little more butter in pan, sprinkle the remaining cup of cheese in a single layer about the size of the bread and put the sandwich on top of the melted cheese in the pan the raw side down in the cheese.
Let cook about two minutes, until cheese in pan is brown and crispy and adheres to the bread.
Remove sandwich to a plate, grilled, crispy cheese side up.
Spread the slices of the ½ avocado on top of the crispy cheese, top with 2 slices of tomato and drizzle some of the peppers on top if using.
